Would someone please explain how emails can be sent thru 3 or 4 IP Addresses to deliver emails in this "Terrorist" and "Hacker" century?

This Ip address is sending a fake Bank of America email to try to get people to sign in. I hope somebody catches this person as his site looks pretty close to the real BOA.
